  • 1 package Cheese tortellini
  • 0.5 cup Cherry tomatoes halved
  • 0.5 cup Cucumber diced
  • 0.25 cup Red onion finely chopped
  • 0.5 cup Black olives sliced
  • 0.5 cup Feta cheese crumbled

Dressing

  • 0.33 cup Olive oil
  • 0.25 cup Red wine vinegar
  • 1 clove Garlic minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Cook tortellini according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
  • Pour the dressing over the tortellini mixture and toss gently to combine.
  • Cover and chill for at least 30 minutes before serving.

Notes

This salad can be made ahead of time and is great for leftovers. You can add other vegetables like bell peppers or broccoli if desired.
