Ingredients
  

Cookie Base

  • 0.5 cup Unsalted Butter softened
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 0.5 teaspoon Baking Powder
  • 0.25 teaspoon Salt

Vanilla Frosting

  • 0.5 cup Unsalted Butter softened
  • 2 cups Powdered Sugar
  • 2 tablespoon Milk
  • 0.5 teaspoon Vanilla Extract

Instructions
 

Cookie Preparation

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Spread the dough evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan on a wire rack.

Frosting Preparation

  • While the bars are cooling, prepare the frosting. In a medium bowl, beat softened butter until creamy.
  • Gradually add the powdered sugar, alternating with the milk, until smooth and creamy.
  • Stir in the vanilla extract.
  • Once the cookie bars have completely cooled, spread the frosting evenly over the top.
  • Cut into squares and serve.

Notes

For extra fun, you can add sprinkles to the frosting before it sets.
