  • 5 oz Fresh Spinach
  • 1 cup Strawberries sliced
  • 0.5 cup Red Onion thinly sliced
  • 0.25 cup Pecans chopped, toasted
  • 2 oz Feta Cheese crumbled

Poppy Seed Dressing

  • 0.5 cup Olive Oil
  • 0.25 cup Apple Cider Vinegar
  • 2 tablespoon Honey
  • 1 teaspoon Poppy Seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • In a large bowl, combine the spinach, sliced strawberries, red onion, and toasted pecans.
  • In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, salt, and pepper until well combined.
  • Pour the dressing over the salad ingredients and gently toss to coat.
  • Crumble the feta cheese over the top of the salad.
  • Serve immediately.

Notes

This salad is best served fresh. You can substitute walnuts for pecans if preferred.
