Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Alternately add the dry ingredients and the milk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
Gently fold in the drained crushed pineapple.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
This bread is delicious on its own or served with a dollop of cream cheese. It also freezes well.
