Preparation Steps
In a medium bowl, combine the rolled oats, peanut butter, honey, and vanilla extract. Mix well until everything is thoroughly combined.
Stir in the mini chocolate chips, rainbow sprinkles, and chopped peanuts (if using). Mix until evenly distributed.
Roll the mixture into small balls, about 1 inch in diameter. This recipe should yield about 12 balls.
Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
