Preparation Steps
Preheat oven to 375°F (190°C).
In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides.

Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

Stir in the diced tomatoes (undrained), black beans, corn, chicken broth, uncooked rice, chili powder, cumin, salt, and pepper. Bring to a simmer.

Cover the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
Remove from the oven and let it stand for 5 minutes before serving. Top with shredded cheddar cheese, fresh cilantro, and sour cream, if desired.
