  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 can corn 15 ounce, drained
  • 1.5 cups chicken broth
  • 1 cup uncooked white rice
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Optional Toppings

  • 0.5 cup shredded cheddar cheese
  • 0.25 cup chopped fresh cilantro
  • 0.5 cup sour cream

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides.

  • Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

  • Stir in the diced tomatoes (undrained), black beans, corn, chicken broth, uncooked rice, chili powder, cumin, salt, and pepper. Bring to a simmer.

  • Cover the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
  • Remove from the oven and let it stand for 5 minutes before serving. Top with shredded cheddar cheese, fresh cilantro, and sour cream, if desired.

Notes
