  • 2 tablespoons unsalted butter melted
  • 0.25 cup brown sugar packed
  • 1 teaspoon ground cinnamon

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  • In a large bowl, mash the ripe bananas. Stir in the melted butter and granulated sugar.

  • Beat in the eggs one at a time, then stir in the vanilla extract.

  • In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • In a small bowl, combine the ingredients for the cinnamon swirl: melted butter, brown sugar, and cinnamon. Mix until well combined.

  • Spoon about half of the batter into the prepared muffin cups. Dollop about a teaspoon of the cinnamon swirl mixture onto each.
  • Top with the remaining batter, filling each cup about two-thirds full. Swirl the cinnamon mixture on top with a toothpick.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
