  • 0.5 cup Cherry tomatoes halved
  • 0.5 cup Cucumber diced
  • 0.25 cup Red onion finely chopped
  • 0.25 cup Black olives sliced
  • 0.5 cup Feta cheese crumbled

Dressing Ingredients

  • 0.25 cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Dried oregano
  • Salt to taste
  • Black pepper to taste

Preparation Steps

  • Cook bow tie pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, halved cherry tomatoes, diced cucumber, chopped red onion, and sliced black olives.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper for the dressing.
  • Pour the dressing over the pasta mixture and toss gently to combine.
  • Gently fold in the crumbled feta cheese.
  • Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

For an added layer of flavor, you can add chopped fresh basil or parsley.
