Instructions
Make the Pretzel Dough
In a large bowl, whisk together the flour, yeast, sugar, and salt.
Gradually add the warm water and mix until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for 30 minutes, or until slightly puffed.
Shape and Boil the Pretzel Bites
While the dough is rising, prepare the boiling solution. In a large pot or Dutch oven, combine the 6 cups of water and baking soda. Bring to a boil.
Punch down the dough and divide it into 16 equal pieces. Roll each piece into a rope about 6 inches long and cut into 1-inch pieces.
Carefully drop a few pretzel bites into the boiling baking soda solution at a time, and boil for 30-60 seconds per side. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
Air Fry and Serve
Preheat your air fryer to 375°F (190°C).
In a small bowl, whisk together the beaten egg and 2 tablespoons of water to make an egg wash.
Brush the boiled pretzel bites with the egg wash and sprinkle generously with flaky sea salt.
Place the pretzel bites in a single layer in the air fryer basket. Cook for 5-7 minutes, or until golden brown and puffed.
Serve immediately with your favorite dipping sauce.
